Fish Tacos

3 oz grilled white fish (cooked)
shredded cabbage or lettuce
diced tomato
diced onion
1/2 tblspn lowfat mayo
squeeze of lime or lemon
corn tortilla

In a corn tortilla, spread mayo and then layer fish, cabbage, tomato and onion. Squeeze lime or lemon over the top. Salt and pepper to taste

Serving size - 2

This is a Phase 3 recipe but can modified to Phase 2 by just wrapping cooked fish in lettuce or cabbage leaf with a squeeze of lemon on top. Phase 2 Serving size is 1

Crunchy Sweet Apple Chicken Salad

One of my favorite main dishes...

3 oz chicken cooked and diced
1 apple diced
3 stalks celery diced
3 tablespoons lemon juice
1/8 teaspoon cinnamon
Dash of nutmeg
Dash of cardamom
Dash of salt
Stevia to taste
Wedge of lemon

Mix ingredients together, sprinkle with stevia and cinnamon. Chill for 20
minutes. Serve with a wedge of lemon and enjoy. On maintenance you can add a little yogurt or lowfat mayo - and sliced raw almonds or walnuts

Coconut Bark

Would not do this while on a round of hcg...but it is a great low calorie treat and really good for you too!

4 tblspn Coconut oil (melted)
1 to 1 1/2 tblspn of cocoa
1/4 to 1/2 cup shredded coconut (add to taste ~ I like coconut so I do 1/2 cup)
4 pkts truvia or purevia (stevia)
2 oz nuts - chopped (almonds is what I use)
1 tsp vanilla extract

Mix all together. Spread in pan. Put in fridge to harden and then break into pieces.


Sweet & Savory Chicken Apple Stir Fry

Ok...can't take the credit on this one...got it from my sis!
4 oz chicken breast
1/2 c. chopped onion
1 apple chopped into cubes
2 tblspn Balsamic Vinegar
salt and pepper to taste

in frying pan, "stir fry" apple and onion in vinegar on medium heat until onions become a little soft. Add chicken and "fry" until chicken is done and apples are soft. (if pan becomes too dry, you can add a little water to help in the "stir fry" efforts)

Serve and enjoy!

Baked Apple ~ Yummy!

1 Medium Apple (chopped into cubes)
1/2 tblspn Ground Cinnamon
1 to 2 pkts Truvia or Purevia (alt. 2 to 3 drops liquid stevia)

chop up apple into squares, put in baking dish or bowl. Sprinkle stevia and cinnamon...microwave til warm...i do 30 seconds at a time til kinda mushy and warm! You can bake it at 350 in oven too (til warm ~ like 10 to 15 mins) but microwave is faster...

tastes like apple pie filling ~ this is comfort food desert!

Coconut Oil! Wow!

Well you know if you've read the Redbook or Dr. S's Pounds & Inches, that we can't use moisturizer or lotion while on hcg...
It says that Coconut Oil is the only alternative!
For the longest time, I let my skin flake away for fear that even a little oil, allowed or not, would counteract my efforts in losing weight!
It took some time before I just couldn't stand it any longer!
So I broke down and found Organic Virgin Coconut Oil (which looks a little like lard ~ gross ~ but after opening the lid it smelled like a tropical drink!) before the skin on my face completely fell off!
OMGosh! Worked like a charm! and no weight gain!
And I have done lots of reading on the benefits of Coconut Oil other than actually using it as a moisturizer...
I will have to post some of my findings...
So Coconut Oil is my new fountain of youth in a jar ~ try it ~ you might just find that you like it!

Been soooooo long between posts...sorry!

Hello Everyone!
I'm so sorry it's been so long since my last post -
Saying my life has been crazy is an understatement
Here's just a run-down of the past 5 months:
Summer sports camps
Foreign Exchange students here for 28 days
School starting
Moved into a new house
Bug infestation (Yes - GROSS! gone now - whew!)
Working like a crazy mad woman~not complaining that I'm busy though!
Football season
...enough said
I have to say with all of this ~ I have done pretty good maintaining my weight! I started reverting back to my old habits of not eating but maybe once a day...when I realized that I was sluggish and grumpy - I got right back to eating 5 small meals a day - proteins and good carbs! Trying to stay completely away from breads!
So I have a new weight goal. Even after losing the original 80 lbs, my body has gotten to the point that this is my new weight...but another 15 to 20 lbs wouldnt hurt either. But I understand too that my body will only get rid of what it will and I'll take the loss of inches as well...
In my off HCG maintenance time I have been exercising ~ walking and small weight lifting ~ conditioning. I'm thinking after this round I want to do some toning exercising...my friend is starting the Insanity workout...I think I may try that ~ lol lets see how I do with that.
I hope everyone is doing well...keep believing in yourself! You can do anything that you put your mind to ~ have faith!
Sorry I kinda rambled...but my mind is so crazy right now with all that is on my plate...
